I am a NFL newbie, I would just like to know why the referee has to display what the fault/error was (without the remote microphone on) and then seconds later, he would do the same thing with the microphone on?? Why not just do it in one go?

The sound off hand signals is the preliminary indication for the crowd and scorer. The mic'ed indication is for TV. Games not on TV (college and preseason NFL) don't use the microphone system.
