The real kind. Black people call it soul food. Do you think chicken karaage compares to it? Or is it more like Kentucky Fried Chicken? They say you thaw the chicken if it's frozen, cover it in flour and then fry it, and that's it. How do you think chicken that you buy at KFC compares to the stuff they serve in the South? I'm only wondering because I went to KFC today and it got me thinking.

fast food fried chicken in no way is nearly as good, nor as unhealthy as good old fashioned home fried chicken.

Popeye's is OK; at least it's not mutant gigantic like KFC's chicken. They must be puttin' hormones in those things...

KFC hot wings are freaking god when you dip it in their hot sauce.
Popeyes is freaking good. Even better when dipped in hot sauce.

Churches and Popeyes are da bomb! country fried chicken is f-ing awsome too, only plave around here that has it is Chili's, weird huh? One thing I miss about FL is Cracker Barrel, they make a mean country fried chicken.

Fried chicken :
For marinade
1 qt water
2 tablespoons salt
2 teaspoons cayenne
2 teaspoons garlic powder
1 1/2 teaspoons white pepper
1 tablespoon soy sauce
2 teaspoons Worcestershire sauce
4 chicken breast halves, 4 thighs, and 4 drumsticks (all with skin and bones; 4 to 4 1/2 lb total)
For dredging
3 cups all-purpose flour
1 tablespoon salt
1 teaspoon garlic powder
1 teaspoon cayenne
1 teaspoon white pepper
Marinate chicken: Whisk together all marinade ingredients in a large bowl.
Add chicken, making sure it is covered with marinade. Chill, covered, stirring twice, about 24 hours
Meanwhile, whisk together all dredging ingredients in a large bowl. Drain chicken, discarding marinade. Dredge each piece of chicken in seasoned flour and put on a large baking sheet. Let stand about 10 minutes.
Fry chicken, turning a few times, 20 to 25 minutes, or until golden brown, then drain on a rack

OMG, I haven't had Church's in SO long.....-drools-
KFC doesn't compare, but it's adequate.....
I actually like KFC better than Popeyes...
But then in my history class, the teach went over the cattle industry and the use of corn fed and the antibiotics...and went to chicken and sausage.....argh....I can't eat meat for a lil bit....good thing it was the new yrs and I just ate what was put in front of me w/o thinking :D

Fried chicken in Alabama is heaven. Hell, we fry everything imaginable down here. Best meal every would be some fried chicken and some ribs topped off with mashed taters and some sweet tea. I scoff at you KFC. You ain't tasted extra crispy until you've tried some in B'ham. I think fried green tomatos came from here.

I used to think Southerners were crazy about frying stuff; then I lived in England for a year, and I realized the stuff they do in the South is only the tip of the iceberg. Many Brits have vegetable oil fryers or 'Chip pans' for making french fries with; however the frying doesn't stop there. I've seen breaded fried MARS BARS, for christ's sake, and I've been told that some Scots will bread and fry a perfectly good PIZZA :gross: :gross: :gross:

Well, there's a famous restaurant in Birmingham. Its called the Burly Earl. Not only is the owner named Earl and quite hirsute, the food will make ya burly too. They have this 1/2 lb burger with 3 cheeses, bacon, and etc....all DEEP-FRIED. I've had two in my life, and both times I could hear my arteries clogging as I lost years off my life. It ain't healthy, but its daaaamn good. Oh, and fried mars bars are no weirder than fried ice cream. I'm guessing they taste pretty good too.

Roscoe's is ok. The place to eat Soul Food is M&M's!!! Long Beach is where it's at.
You gotta try the Smothered Chicken.
It's southern fried chicken, smothered in gravy with biscuits.

Soul Food is pretty popular in NYC too, especially in Brooklyn and Harlem. The small mom and pop restaurants were the best. I used to order it or eat it twice or three times a week in college.
But why is Roscoe's so popular? Everyone I know that visited Cali made it a priority to eat there.
Since we're on the topic of chickens. Man, Jamaican Jerk Chicken is off the hook too. I made it a priority to always buy some when I'm in Brooklyn or when I'm uptown.

:P Alabam has the best BBQ'D anything is this fine country! I've been to the Full Moon in Birmingham which was great but the Brick Pit in Mobile I think is the best BBQ I've ever tasted, I'd crawl back for those ribs n' pulled pork :P

I was friggin raised on Church's Chicken! Our family was poor back then and a trip to Church's was a real treat to us. Nowadays I dont eat much fried chicken, but man I'd kill for a thigh right now! :D

I ate nine pieces of Church's leg and thigh special. I have to admit the last two pieces were getting more difficult to gulp down. Their biscuits n honey are a great accompaniment also. Popeye's chicken is difficult to defeat. They can't go head to head(or leg to leg) with Church's price points tho'.

Ain't nothing like some good ol' fried greasy chicken and some home made biscuits!
Yeah you can go to Popeye and Church's, but cooking it yourself is the best. For those of you that are brave enough to ask or befriend a "Black" person, they just may treat you to some southern food. You may be surprised to know that Asian's and Black's eat the same, but cook it differently. So if you are willing to undertake the task of cooking it yourself, here's what my mother and the women in her family
does to make some lip smacking chicken.
"Yo' mama's fried chicken"
*Wash and clean the chicken. Leave chicken damp, don't pat it dry. Cut off any extra fat! Put into a bowl.
*Salt or seasoning salt, pepper, hot sauce. Add enough seasoning to your personal taste. Mix to coat well.
*Let it set for awhile (if you can wait)
*heat enough cooking oil to fry - about one cup. Depending on the size pan. If you're using a deep fryer your set. Cook on medium flame.
**side note**
How do you know when the oil is hot? Take a pinch of flour and drop it into the oil. If it starts sizzling, it's ready. Make sure your oil is not too hot where it is smoking. If it is turn it down.
*put enough flour into a plastic bag to coat chicken pieces. ( or do it like my mom and her peeps do, a brown paper bag. Sometimes I swear that brown bag holds the true secret to good chicken). If you would like, you can add some more seasoning to the flour. Add chicken to flour and shake until pieces are coated.
*Carefully put chicken into the hot oil, cook until golden brown, turning often to cook evenly. To see if it is done? Stick chicken with fork when juices run clear, it's done. If you are using a deep fryer, it's done when the pieces float.
Serve with some hot sauce, lemon aid ice tea, french fries or potatoe salad, hot biscuit and a peach cobbler.
