is anyone into baking?
i got into baking about 11 years old when i learned that
my then boyfriend was a cheesecake fan.
so it's true what they say. write every recipe down.
because i did eventually come up with the perfect
cheesecake recipe but it's lost.
i'm really into baking breads these days. and i've also
read a lot of books on the topic.
also tried the no knead bread recipe featured on nyt
but, i found that i actually enjoy kneading bread dough.
any bakers on the forums? good recipes and tips
will be GREATLY appreciated.

you had a boyfriend when you were 11?
the girlfriend got a breadmaker for free, and she insisted that she would use it. about a year went by and it never left the cabinet. so finally she agreed to throw it away.

I just baked some amish friendship bread. It's like the chain letter of bread baking. I can post a recipe if anyone is interested, but you need the fermenting starter i think.

That stuff....just tastes weird.
My sister used to make some awesome banana nut bread.
She bakes it for her hubby now. None left for the lil bros. =P

Really? I thought it tasted pretty awesome. Maybe you had an overly fermented batch? The one I made was a little dry, but good (i used choco pudding instead of vanilla and added choco chips) and some coworkers made some kickass versions also. of course, a lot of them also completely ruined theirs by leaving the starter in their car or stuff like that...

It may seem innocent enough to you, but he brings up that damn breadmaker every chance he gets. You should see his eyes roll back in ecstacy when he can relate the story in person about how, "She was going to make BREAD, and she never DID! And I always ASKED HER TO, and she finally THREW IT AWAY! HAHAHAHA!" Or "Are you going to cook that? LIKE YOU WERE GOING TO BAKE BREAD?"
Trust me, after two years, you would get pretty damn sick of it.

i can make a really fluffy japanese cheesecake.
it was the one thing i made that my ex actually liked, and complimented me on. jerk.

It's like all the rage here at work right now. A coworker just made a lemon poppyseed version and a pistachio version. CRAAAAAZY.

i've heard the breadmaker story a couple of times from swk also.
kim, you have to give him something else to associate with bread.
like a hard punch to his belly.
oh, i'm thinking of doing a starter for sourdough bread in the future.
last night i baked pretzels using wolfgang puck's recipe for pizza dough.
it's on marthstewart.com.
i used a little bit more honey and waterm, which i then dunked in boiling water before baking them. it was fantastic. i'm going to try stuffing them with cheese and garlic tonight and bypass the hot water thing.
i can modify the recipe and post it when i have more time.
akane, i'd like the recipe for the japanese cheesecake if you have?
i actually don't really like the dense ny style
my friend's b-day is on friday and i wanted to bake a cake or a cheesecake for the dinner party.
any good recipes for cake that you had success with?
here's the recipe:
7 ounces cream cheese
1/4 c whole milk
1/2 c of sugar
3 eggs, separated
1/4 c of corn starch (no flour!!)
2 tbls of lemon juice
1/2 tsp of cream of tartar
2 1/2 c of boiling water
preheat oven to 350 degrees. spray a nine-inch cake pan with cooking spray. beat cream cheese with milk to soften. add half of the sugar, yolks, cornstarch and lemon juice and beat until smooth. beat whites in a separate bowl until foamy. gradually add remaining sugar and cream of tartar, beating on high until soft peaks form. slowly fold whites into mixture, stirring gently. pour this all into the cake pan and place into a large roasting pan. place on the lower oven rack and pour enough boiling water in the pan so it reaches half of the cake pan. bake 35-40 minutes. ***if the top of the cake turns too dark, cover with foil, but don't open the oven door to check until at least 20 minutes have elapsed. ENJOY!
