any secret family tofu recipes or recipes that you've tried and could share? please post here :)

i can make 香乾肉絲 (shredded pork and tofu), but i kind of invented my own bastardised recipe, which consists of marinading the pork with some of your basic marinading ingredients for Cantonese dishes - sugar, a little starch, soy sauce, maybe sesame oil. but no oyster sauce. and then i'll throw in whatever sauce that comes in a bottle that i feel like throwing in, because it's kind of hard to go wrong when you marinade with the above mentioned ingredients. the last few times i've made it, i used 鮑魚XO醬 (Abalone XO Sauce), which sounds weird, but the dish had came out pretty good.
anyway, you do your usual routine with pork - wash, dry, tenderise (always with the back of your cleaver, gotta be Chinese ghetto). then you shred it. the tofu - remember, this dish is cooked with 豆乾 (dou gan), i don't know what the English name is. in case you don't know, it's not the usual white and soft tofu. this is brown and hard. so with the tofu, you wash it, dry it, shred it.
also get some of those small red or green peppers. those small Thai peppers would be great, but halopeno peppers would do, too. dice that up.
let the pork marinade for at least half an hour. warm up your wok with oil. give it a nice foundation by frying the peppers first. then add the tofu. yes, since it's 豆乾, it takes longer to cook and you should fry that before the pork. then add the pork. since everything's shredded, it doesn't take long to cook and you can keep the fire at high and just go all the way until everything's cooked enough to eat.

doesn't "shred" just mean to cut into strips...? i guess i just cut the pork with my cleaver into strips about 2 or 3 segments of a finger long and at a width just a little thinner than my pinky finger. maybe a little wider, depending on how lazy i am. do the same with the tofu.

i just tried tofu cheesecake today.
crust = graham cracker crumbs, almond extract, maple syrup.
pie = silken tofu, almond extract, sugar, a little salt.

I also noticed a lack of description of the overall experience that must have been.
I like adding tofu to my soups, especially with watercress and pork soup bone.

Is that really all you need in the marinade? I love this stuff and I thought the restaurants used some secret recipe because it tastes so good haha.
my step dad makes a kick ass mapo tofu, but i think he just uses store-bought chili sauce. and i'm about to eat some tofu fa...yummy.

no i don't know how they make it at the restaurants. i just concocted my own recipe. it doesn't taste the same, but it's still pretty good.

aren't we critical. my tofu cheesecake was good.
crust: crush 2 cups of graham crackers, mix with 2 tblspns almond extract and 1/2 cup maple syrup. flatten into oiled 9 inch pan. bake 5 minutes.
filling: blend (i used my magic bullet) 1 box silken tofu (medium firm), 1 tablespoon almond extract, 1/3 cup of sugar, 1 pinch of salt. pour into crust. bake half an hour.
chill for 2 hours - overnight.
it was good.

no, it's like almond tofu in a pie, but thicker.

I like it in salads.
Get your off-the-shelf grocery store bag salad. Assemble the following ingredients:
- Bag salad
- Tofu cut into half inch cubes
- chickpeas or kidney beans
- bacon bits
- Cheese of your choice
- thinly sliced onion (red, vidalia, yellow - whatever you have on hand)
- hard boiled egg
- mandarin orange slices and or raisins
Toss and lightly dress with your fav salad dressing.
It's somewhat low carb and high protein too!

don't know her recipe, but i think she makes her own soy milk, too.

there were also some newspaper articles but they are archived now and you have to pay to look at them.

Well i am a very big eater and i love tofu.i will certainly try the above recipes. Well i found a very simple recipe tofu (http://www.imsickofbeingfat.com/forum/4281-pineapple-tofu-ice-cream.html) that has a very delicious taste. I'm sure you will all love it.

tastes better if you marinate it balsamic overnight.
