I absolutely love fish. Sashimi is great--probably my favorite way to eat fish. My dad prepares a mean steamed fish topped off with green onions, ginger, soy sauce, and boiling oil (to fuse all the flavors together). Yummy.

As a child when did I first hear about trout fishing in America? From whom? I guess it was a stepfather of mine.

Summer of 1942.

The old drunk told me about trout fishing. When he could talk, he had a way of describing trout as if they were a precious and intelligent metal.

Silver is not a good adjective to describe what I felt when he told me about trout fishing.

I'd like to get it right.

Maybe trout steel. Steel made from trout. The clear snow-filled river acting as foundary and heat.

Imagine Pittsburgh.

A steel that comes from trout, used to make buildings, trains and tunnels.

The Andrew Carnegie of Trout!

THE REPLY OF TROUT FISHING IN AMERICA:

I remember with particular amusement, people with three-cornered hats fishing in the dawn.

From the novel Trout Fishing in America by Richard Brautigan (1964). Hey, it's about fish!

My favorite is either steamed with shredded green onion and ginger, or hong sau, where it's kind of grilled on the outside but made into a sauce after. I've only had fish done hong sau recently, what a treat to have a new yummy dish as an adult.

Sometimes we take out the egg sacs before hand and fry it up dry and salty. Depends on the fish.

I think the only fish I don't like is shiojake, that really salty salmon. Just about burned a hole in my stomach. I love sashimi, even squid I'll eat raw if it's really fresh.

I don't eat eyeballs anymore, and I can't eat the fish jaws like some people can. But I do dig out the cheeks.

Every kind of fish floats my boat. Fish eggs rock, fish eyes rock, and fish jaws are great. My parents used to give the fish head to me and I'd eat it.

How do you eat the jaws? I've only seen people do it out of the corner of my eye because I'm usually busy shoving the other parts into my mouth. It's the actual lips right? not like the meat in the head behind the eyeballs...

I love the fin bones... they have tasty shreds.

I don't eat eyeballs anymoreI used to loooove the eyeballs. I was never a fan of the goo but I liked nibbling on the little pearl inside.

and I can't eat the fish jaws like some people can. But I do dig out the cheeks. The cheeks are the best meat on the entire fish in my opinion. They need to genetically engineer a fish that's all cheeks and I'll be set.

Not even meditteranean style cuisine? They eat the whole fish too. I think most coastal peoples do.

Favorite way to eat fish is "ching-jing" steamed with green onions and ginger Cantonese style. I say that because "toishan-style" makes me nauseous -- blackbean or bean sauce fried then steamed, or covered in "ha jeung" (shrimp paste) before steaming.

Favorite is the cheek and the collar(?) and used to fight my family for the tail.

Just discovered Louisiana style deep fried baby catfish...yummy!
